FSHN 101 ONL - Intro Food Science & Nutrition

Discusses the evolution of the food system to meet the needs and desires of a complex, heterogeneous society. Provides an overview of food in relation to nutrition and health, composition and chemistry, microbiology, safety, processing, preservation, laws and regulations, quality, and the consumer.

Special Instructions:

This section of FSHN 101 is offered Monday, May 14 through Thursday June 7, with the final due on Friday, June 8 at 11:59 pm. The course will run asynchronously weekly Sunday through Thursday, with a 2 hour synchronous session 11 am-1 pm each Wednesday (May 16, 23, 30 and June 6). The Wednesday sessions will be study sessions during which students can ask questions about the material before the end-of-the-week assessments which are due on Thursdays at 11:59 pm.
